Creamy Cajun Shrimp and Sausage Pasta

This spicy pasta dish goes together quickly and can be served in the same pot it’s cooked in. Love it when that happens
Creamy Cajun Shrimp and Sausage Pasta
1 lb. large shrimp, peeled and deveined
Salt and pepper to taste
2 tsp Cajun seasoning
1 tsp dried Oregano
2 tbls vegetable oil
1 (11oz) pkg smoked sausage or chicken sausage, sliced into 1/2” pieces
1 lb dry fettuccine
1 onion, sliced
1 red bell pepper, sliced
1 yellow pepper, sliced
4 cloves garlic sliced
2-3 tbls Cajun seasoning
1 tbls brown sugar
1 (15oz) can crushed tomatoes
1 cup chicken broth
1 cup heavy cream
1/2 cup Grated Parmesan
1/4 cup chopped parsley
Toss shrimp with salt, pepper, Cajun seasoning, and Oregano, and coat well. Heat oil in a large skillet over medium-high heat and add shrimp. Cook for 2 minutes. Flip shrimp over and cook another minute or so. Remove to a bowl and set aside. Add a little more oil and add sausage. Brown until caramelized on both sides. Remove to bowl with shrimp.
Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until al dente.
Add a little more oil to the pan and add onion, pepper, garlic, Cajun seasoning, brown sugar, and a pinch of salt. Sauté until softened a bit.
Add crushed tomatoes, chicken broth, and heavy cream. Bring to a simmer, stirring and scraping up any brown bits from the bottom of the pan, simmer 2-3 minutes.
Add Parmesan and stir into sauce. When Parmesan is blended in, add cooked pasta and stir to combine and heat through 2 – 3 minutes. Add shrimp and sausage and check for seasoning.
Sprinkle with chopped parsley.
