Cornmeal Cheddar Bacon Pancakes with Fried Egg, Avo and Salsa
1/2 cup all-purpose flour
1/2 cup yellow cornmeal
1 tbls sugar
1 tbls baking powder
1 tsp kosher salt
2 tbls butter
1 large egg
1 cup buttermilk
1/2 cup shredded sharp Cheddar
1/2 cup chopped crispy bacon
1 scallion chopped
Whisk together the flour, cornmeal, sugar, baking powder, and salt in a mixing bowl.
Melt the butter and Set aside to cool slightly while you prepare the wet ingredients.
Whisk together the egg and buttermilk in a large mixing bowl. While whisking, pour in the melted butter and stir until combined. Stir in the dry ingredients just until combined, being careful not to overmix. Fold in the Cheddar, bacon, and scallions.
Place a skillet over medium heat and melt some butter. Ladle some batter spreading gently to form a thick circle. Cook until bubbles appear on the surface, 1 to 2 minutes. Flip over and cook until golden brown, about 1 to 2 minutes more. Add a little butter to the skillet for each batch of pancakes made.
Serve with syrup or salsa and avocado
