Mushroom Caramelized Onion and Goat Cheese Puff Pastry Tart

I’m never without a box because it’s invaluable for throwing together quick & simple sweet or savory dishes that are both delicious and so impressive. Once you know the super simple technique of making a simple puff pastry tart, you can use the same method to make any type you want based on what you have! Switch up the veg and the cheese. Mushroom Caramelized Onion and Goat Cheese Puff Pastry Tart
(Makes 8 tarts)
2 large onions thinly sliced
2 cups mushrooms sliced
3 tbls butter
2 tbls olive oil
1 17.3 oz package of frozen puff pastry, thawed and each sheet cut into 4 squares
Egg wash (1 egg mixed with 1 tbls water)
6 oz Goat Cheese
Fresh thyme
Preheat oven to 400º
Heat 3 Tbs butter in a large saute pan over medium-low heat.
When butter is hot, add onions. Cook until soft and tender. Stir often, The key is to cook the onions low and slow until golden.
In another pan heat 1 Tbs. of olive oil and add mushrooms. Saute until mushrooms are soft and browned.
Season with and pepper.
Score each square ½ inch from the edge and using a fork, dock the inside of the square. Place cut puff pastry squares on a baking sheet lined with parchment. Brush the egg wash along the outside of the squares.
Divide the goat cheese among the squares. Divide the onions and then the mushrooms among squares as well. Season with salt and pepper and sprinkle with fresh thyme leaves.
Bake for 17-20 mins or until edges are golden brown and puffed.
