Parmesan Lemon Spaghetti Egg Nests

Parmesan Lemon Spaghetti Egg Nests 🍋
Perfect for breakfast, lunch, or dinner!

1 lb spaghetti
4 eggs
1/2 cup finely grated Parmesan
1/2 tsp salt
1/2 tsp Pepper
Zest of one lemon
2 handfuls of arugula roughly chopped
1/2 tsp red chili flakes
2 tbsp finely chopped basil
Eggs 

Preheat oven to 350F.

Cook pasta in a pot of boiling water until tender, 7 to 8 min. Drain, but do not rinse. Allow cooling for 10 minutes.

Whisk eggs in a large bowl. Whisk in Parmesan, salt pepper, lemon zest, and chili flakes. Stir in spaghetti and arugula until well coated with egg mixture.

Dividing spaghetti mixture into 1 cup portions on the baking sheet forming a nest, using your fingers to create a crater. Crack an egg into the middle of each crater, sprinkle with salt and pepper and bake in the oven for 15 min or until the egg is set. With a spatula, remove spaghetti nests from the pan. Sprinkle with Parmesan, basil, and chili flakes. Serve with marinara sauce, if desired
