Tortellini In Creamy Vodka Sauce

Tortellini In Creamy Vodka Sauce
 
6 tbls butter
1 small onion chopped fine
4 cloves garlic, chopped
2 (8 oz) cans tomato paste
1/2 tsp. crushed red pepper flakes
1/2 cup vodka
1 tsp Kosher salt
1/2 tsp pepper
2 (19oz) bags frozen Tortellini
1 1/2 cup heavy cream
1 cup Parmesan freshly grated
8 leaves fresh Basil
In a large pot of salted boiling water cook Tortellini until aldente. Drain and reserve 1-2 cups of pasta cooking water.
 
In a large skillet over medium heat, melt butter. Add onion and garlic and cook for 4 to 5 minutes.
Add tomato paste and red pepper flakes and cook, stirring frequently, until the paste has coated onions and garlic and is beginning to caramelize, 5 minutes.
 
Add vodka to the pan and stir, scraping up any browned bits from the bottom of the pot.
 
Add 1 cup of pasta water and heavy cream, stirring to combine. Add half the Parmesan, the basil leaves and stir until melted. Turn off heat and stir in cooked pasta. Toss in however much more Parm you want adding more pasta water if the sauce is looking dry. Season with salt if needed. Serve topped with more Parmesan and torn basil leaves.
